Flu-Fightin’ Vegetable Soup

A few days ago I was hit smack in the face with the flu. Yes, that can’t sleep, don’t want to eat, reach for the Kleenex box kind of flu. Before you knew it, I was down and out aka in the fetal position thinking life was over. Once I moved past that stage {thankfully, eh!}, I was keen to kill this flu and move forward with my life.

After debating what I wanted to eat for an eternity, I decided on a quick and easy soup.  I cleared out the contents of my fridge and the next thing you know this delicious soup was born.

‘Don’t Come Near Me or I’ll Sneeze on You’ Soup

  • 4 cups of vegetable stock
  • 1 zucchini
  • 1/2 head of broccoli
  • 2 small white potatoes
  • 1/2 red onion
  • 1 green onion
  • lemon
  • garlic
  • ginger
  • thyme

The how to:

  1. Dice vegetables.
  2. Saute red onion and garlic over low heat in olive oil. Add potatoes and vegetable broth. Bring to a boil.
  3. Add softer veggies (zucchini, broccoli, green onion), lemon, ginger and thyme.
  4. Simmer for 15-30 mins or until all vegetables are soft.
  5. Season with salt & pepper and serve!

Easy as 1-2-sneeze! ;)

If for some reason you end up with a monster flu or cold, remember to drink plenty of water {hot water, lemon & ginger is the best!}, get some rest {yes, this is your opportunity to do nothing!} and nourish your body with goodness too {like with this flu fighter garlic soup or these immune boosting smoothies!}.

Yes this is advice for me, as well as, advice for you. ;) It’s super easy to ‘fight’ the flu and try to keep up with your day-to-day life. Here’s the thing… sometimes you just gotta let the body do it’s thing. What you need right now is your monster flu to pass as quickly as possible and the only way that’s going to happen is if you take care of YOU.
